Yes, yes, yes, another loaf of bread. So what else is new? Well, this one rose very nicely in the oven, with a little dome at the top. And that’s because I could actually tell when it had doubled.

After you shape the dough, it’s hard to tell when it has risen enough. This time, I cut off a lump of dough and put it into a small glass, with a rubber band to mark the top. Ta-da! An indicator. The main bread went into a basket lined with a floured cloth, and the whole thing inside a plastic (reused and not recycled) grocery bag so it wouldn’t dry out.

This morning, after leisurely rise overnight, the indicator was doubled. When I unwrapped the dough, it was filling the rising basket, still soft and moist, with bubbles visible just under the surface. So it stuck to the cloth when I turned onto the peel. It baked up great.

Meanwhile, the orchid is still an orchid.
