
One of the ways I survived my cold was to make lots of hot soups and stews. They tasted so good I’m still making them. This is the latest, a hot pot with squash and vegetable and noodles from Japanese Hot Pots. That book has been a life-saver.
I’ll tell you more about it later. For now, this particular hot pot was Houtou Nabe. It’s full of kabocha squash, taro root, daikon, carrot, and good old mushrooms and tofu. It’s thickened by cooking the noodles right in the broth. Another soothing bowl. Mmmm.
